When I was younger we took some cooking classes that a friend’s mom had won at an auction. They were a good excuse for us to get together and drink some wine while learning to make different foods. Among those foods I learned to make pasta and puff pastry salmon. One of my favorite parts was the dessert though, which never failed to be incredible. One year we made my very favorite- peanut butter pie! I’m a peanut butter junkie, to be honest. The next year’s dessert was decadent and rich, something that I love. It’s finally time to share this brownie bottom chocolate chip cheesecake.

Ingredients

  • 1 boxed brownie mix (or a homemade recipe)
  • 5 8 oz blocks of cream cheese
  • 6 eggs
  • 2 tsp vanilla
  • 14 oz sweetened condensed milk
  • Chocolate Chips

Brownie Bottom Chocolate Chip Cheesecake Directions

  • Preheat oven to 350.
  • Prepare one boxed brownie mix according to the directions. (Or, if using a homemade recipe prepare the mixture). 
  • Pour into 12” springform pan.
  • Bake for 15 minutes. ONLY 15 minutes, it will not be fully done.
  • Turn oven down to 325.
  • Blend the remaining ingredients (except chocolate chips).
  • Pour cream cheese mixture on top of the brownie crust. The brownie crust won’t be fully done- that is how you want it! The cream cheese mixture will push it up against the edges to create a crust. 
  • Top with as many chocolate chips as you want. 
  • Bake at 325 for 1 hour. 
  • Turn off the oven and let the cheesecake sit for one hour (keep the door closed).
  • Refrigerate until set.

Tips & Tricks

To blend all of the ingredients you can use a hand mixer or a KitchenAid. Honestly, the easiest way is to literally put it in a blender though. This gives an easy pour and blends up all of the cream cheese which can sometimes be difficult. However, it is okay if your cream cheese is still a little chunky too. 

I’ve made this with coconut sweetened condensed milk and it works just as well. I think the only advantage is that it was organic. I haven’t found an organic version of the normal sweetened condensed milk yet. 

Feel free to use chunks of chocolate, regular chocolate chips, or the minis. Honestly, you could even throw M&Ms on top if you really wanted to! (Except use these naturally colored candy drops instead to ditch the dye). The basics of the cheesecake will remain the same but how you top it is totally up to you! Heck, if you wanted to add some peanut butter you could chop up Reece’s and throw those on top! I think you get the picture…

This dessert is still one of my favorites to make. For one, it uses up some eggs which we always seem to have an extreme abundance of. Second, we don’t have cheesecake often so I love whipping it up for mother’s day or father’s day as a special treat. It’s one of the only times we have something so fancy for dessert. We’re typically the type to throw something simple together like a pie (especially when we can our own pie filling) or an easy cake for a birthday.
