If I’m telling the whole truth and nothing but the truth, I didn’t expect it to be this hard. Evenings are, by far, the worst time of day for our girl. Some people call it witching hour but I think she’s just tired by the end of the day. Heck, I am too! I’ve found myself baby wearing while trying to make dinner or scrambling something quick together. More often than I’d like to admit, I find myself wishing we could just go out to dinner or grab a takeout option. Since we definitely don’t want to do that, I’ve found myself reaching for the easiest meals possible. These cheesy sausage english muffins are not only delicious, they can be made with one hand.Ingredients1 jar Old English Cheese Spread 1 lb sausage 4 english muffinsDirections for Cheesy Sausage English MuffinsBrown sausage and mix in the cheese.Split English muffins and put butter on them. Bake or toast them until golden brown.Pile the sausage cheese mixture on each half of your english muffins. Serve.Cheesy Sausage English MuffinsThe amount of english muffins you need depends on how heaped you want the meat. We like them to be more protein than carbs so around 4 English muffins split in half allows us to have a good ratio. If you want less meat per muffin you can just use more.Optional Directions You can throw them back in the oven with the sausage mixture on top if you want them to be a little warmer. Sometimes the assembly can take a bit (especially with a baby on the hip) so I’ll put them back in the oven at 350 for a few extra minutes to get them nice and toasty warm. Make sure you use unbleached parchment paper to avoid heating your food on bleach!That’s it! Can you believe how simple these are? On top of that, they are a family favorite around here.Old English Cheese SpreadThis recipe doesn’t really follow all of my made from scratch or non-toxic guidelines. It is a recipe that my grandma used to make and she passed it down to all of us grandkids. She’d serve it with soup and a salad to make sure we didn’t get too many carbs. To be honest, the Old English Cheese doesn’t really fit either of those descriptors. I mean it’s made by Kraft which tells us everything that we need to know really. It is really sad considering it’s just so good! I do think that you could make a cheese mixture or even possibly use shredded cheese and it may be just as good. It’s something that I haven’t tried yet but fully intend to! Again, the baby on the hip thing really puts a damper on allowing me to experiment and be creative. So, if you’re out of Old English or just plain don’t want to use it, go ahead and try another type of cheese, just make sure you let us know how it goes!In Summary: Cheesy Sausage English MuffinsThese cheesy sausage english muffins check the boxes for easy and quick but, more importantly they check the box for delicious too. Even better than that, they can also be multiplied to feed the masses and are also fairly cheap to make. I think the only thing that would make them better is homemade English muffins! I’ve heard that they are pretty easy to make but I haven’t given them a shot yet.
