Baking is something that I just love to explore and it brings a sense of contentment. That is the main reason that most of the recipes that I share are “sweets” like these brownies- Classic Brownies – because I enjoy them! I find dinner recipes a bit harder. There is a lot riding on that meal turning out! If a dessert doesn’t turn out it really doesn’t matter. We’ll feed it to the animals and our life moves on. If dinner doesn’t turn out that means I have to immediately make something else. Talk about an added layer of stress to cooking! This week I was finally bold enough to try a new dinner recipe though. Thankfully, it turned out well and I didn’t have to make a second dinner. This chicken divan turned out amazing and we gobbled it all down! The Original Recipe The original Chicken Divan recipe is from a book called “Recipes from the Kitchens of Chippewa.” The ladies auxiliary to the Chippewa Fire Department put this book together as a way to raise funds for the Chippewa Fire Department back in 1971. I honestly found this book at the thrift store and have absolutely no idea where the Chippewa Fire Department is! To me, that makes it even more special. It’s the cutest little book full of tips, tricks, and even some Bible inspiration. It also makes it more important for me to share the person who submitted this one. Here on the world wide web we just don’t know who is going to be searching for what and I have hopes that someday this name might come up and a family or friend will find this recipe again. We are enjoying this recipe today because it was one of Karen Landsbaugh’s favorites and she chose to have it submitted to contribute to this book. We want to thank Karen for sharing this with us so if you know her- give her a big ‘ole thank you for us! Ingredients 2 pkg. Broccoli2 cup cooked chicken or 3 chicken breasts1 tsp. Lemon juice2 cans cream of chicken soup½ cup mayonnaise¼ to ½ tsp curry½ cup grated american cheese½ cup bread crumbs1 tbsp melted butter Directions Cook broccoli, arrange in large greased casserole. Place chicken on top. The first steps are easy- add broccoli and chicken. Combine soup, lemon juice, mayonnaise, curry powder, and pour over chicken.Sprinkle with cheese. Combine bread crumbs with butter and sprinkle on top.Bake ½ hour in 350 degree oven or until brown on top. Makes plenty for 6 persons. Baked chicken divan. Tips & Tricks First of all, cook your chicken in your instant pot to make this meal super easy. Or, if you want to make it even quicker you could use a rotisserie chicken from the grocery store or canned chicken if you have that on hand. Second, buy the veggie steamer bags to make this meal super easy. I honestly didn’t cook my broccoli and it was absolutely perfect. It will cook while it’s in the oven so I’m not honestly too sure why it needs to be cooked ahead of time. However, if you do want to cook it go with the steamer bags. For only two of us, I made half of this meal and it was wonderful. We ate the whole thing but it was just the perfect amount for us. If you’ve been here for any amount of time or if you’ve looked at any of my other recipes you probably know that i wouldn’t use a can of cream of anything in my food. We don’t buy those anymore! I’m not judging you for using them, we used them for a long time. I would challenge you to look into those ingredients though and make sure that is what you want feeding your family. There are some “better” options out there that are organic and have better ingredients so I would suggest those if you want canned. If you don’t, Azure Standard has a cream of mushroom soup mix. Whenever a recipe calls for a can of cream of anything I use this mix to make up some soup. I honestly think you could swap out the veggies on this too for some variety. Peas, green, beans, even a mix of veggies would be good with this. In our future of making this we will definitely be adding more variety so that I can serve it more often! In Summary: Chicken Divan This was a fantastic dinner and I will definitely be making it again. I get so nervous around dinner time and always want to turn to something quick and easy. Let’s face it, after a long day of work it’s rare we want to expend another big effort to get dinner on the table. Thankfully, this recipe definitely checks the boxes for both quick and easy.
