Well, I especially love them since I’ve been pregnant. If the old wives tales are correct I would definitely be having a girl. We will find out in a few months if they are right or not! Anyways, I’m trying to still eat healthy to make sure the baby is getting the best nutrients possible. We already don’t eat fast food and I still cook majority of our food from scratch. That’s basically how I justify our desserts, too. They are cooked from scratch and the rest of our diets are clean. Life is all about balance. Sometimes I settle for a piece of dark chocolate for dessert. Other times, I use it as an opportunity to get creative and help either clean out the pantry or empty a jar or two. For this one, we focused on jars, or to be specific jam. This jam and fruit cobbler was delicious and low sugar too!Use fresh, frozen, or canned fruit.JamTo make my own jam I use the pomona’s pectin so that I can make low sugar versions. I know there are people out there that say the pectin in the fruit should do the job but I haven’t learned that method. We initially started with the clear-jel and then once I found out about Pemona’s I’ve permanently switched to it. I love to make jam, it’s honestly a pretty fun canning process. The problem is, we don’t eat a lot of jam. I always end up with it lasting a couple years and then getting down to me trying to use it all up so I can make a fresh batch. We aren’t really toast people so I’ve had to get creative to use it all up. Anyways, I just wanted to point out that the jam doesn’t have much sugar in it because of how I make it. You can swipe your own Pemona’s Pectin from Azure, by the way!Ingredients3 cups fresh or frozen fruit ½ pint heated up jam ⅔ cups flour ¼ tsp baking powder Dash of salt ½ cup softened butter (or shortening) 1 egg ½ tsp vanilla extractJam and Fruit Cobbler DirectionsPreheat oven to 350. Grease pie pan. I’m obsessed with stone pie pans but if I could afford it i’d also get a cast iron one! Add fruit and jam to the pan and mix. Make the topping. Mix the butter and egg together. Add the flour, baking powder, salt, and vanilla extract. Mix again. Drop by the spoonful on top of the fruit and jelly mixture. Bake for 30-45 minutes. Jam and Fruit CobblerCombinationsFor this particular picture shown, I used a frozen mixed berry blend and a strawberry jam. Feel free to get creative here though! Peaches with blueberry jam. Strawberries with raspberry jam. Heck, apples with strawberry jam! There are so many different combinations here and you can really try any and all of them that you want to. One of my goals is to try this with canned pears and then use a pear butter on it. We also can a lot of peaches so I’d like to try to use a jar of those at some point too. I’ll try to remember to update this as we try different combinations so that you’ll have better ideas to go off of.Fruit and jam before the cobbler topping.The other option is to mix and match your jams. Have a few jars that have just “some” jam left in them? This jam and fruit cobbler would be a great way to clean out the fridge and clear out all of those jars. There really aren’t any rules on having to use one flavor or another. Feel free to get a little wild here! In my opinion, the best types of recipes are the ones that allow you to use what you have on hand. Well, I prefer when they help me clear out a little clutter too but that could just be me!In Conclusion: Jam and Fruit CobblerThe best part about this recipe is how adaptable it is. You can use any sort of fruit that you want and any sort of jam that you want. If your jam doesn’t set? Use it in this cobbler! Don’t love the jam flavor? Add it to some fruit to change it up! It’s such a good way to use up both jars and/or potentially clear some freezer space. Or, use up some fresh fruit that is about to go bad!
