I made incredibly too much jam the past few years that now needs to be used up. I also had some jam not set that I don’t want to throw away. Plus, I need to empty some jars to try my hand at canning carmel. This has required me to get pretty creative with some recipes. It’s also why I’ve been sharing so many jam recipes lately. Don’t worry, this jam quick bread is the last one I’ll share for awhile!Jam FlavorsMy olive berry jam is the one that didn’t set and that’s what I used in this recipe. The flavor of these little things is incredible. I was so dang bummed when it didn’t work! However, it works really well for baking and was perfect for this recipe. That being said, I think you could use any flavor you wanted for this bread. Just as long as you mix it really well, you can pick your favorite flavor. Jam Quick Bread Ingredients 1 cup butter (melted) 1 cup sugar ¼ cup brown sugar 2 eggs 2 tsp vanilla 4 cups flour 2 cups buttermilk 2 tsp baking soda 2 tsp cinnamon 8 oz jam Optional Topping4 Tbsp melted butter ⅔ cup sugar 3 tsp cinnamonDirections This recipe makes two loaves. Preheat oven to 350.Mix all ingredients except jam together. Pour into two greased loaf pans. (We love these silicone pans.)Split jam evenly between two pans by pouring it on top. Swirl into the batter really well. If adding the topping, pour half on top of one loaf pan and half on top of the other. Bake for one hour or until golden brown. Jam Quick BreadTips & TricksIf you want to cut down on sugar you can omit the brown sugar. I definitely think it’s plenty sweet without it! Plus, we only use a low sugar jam too. If you are using a standard jam it’ll probably be plenty sweet without the brown sugar. The topping will make the bread sweeter and crunchier on the top. It’s delicious, absolutely delicious. The reason that I make it optional is that I’m genuinely not sure it would pair with every jam flavor. Although, to be fair I haven’t found it to be incompatible with any of the flavors I’ve used so far either. In Summary: Jam Quick BreadThis jam quick bread is the perfect treat. It’s great for breakfast, a snack, or, our personal favorite, as dessert. We try to steer clear of processed food so a chunk of bread slathered in butter is a pretty dang healthy dessert as far as I’m concerned. My other favorite way to eat it is on the side of a pile of scrambled eggs. Nothing better than eggs from our chickens and a wholesome homemade bread. What’s your favorite type of jam to bake with?
