Especially when it’s a dessert that you can make yourself? That’s exactly what happened with this one. We spend a lot of time together as a family on the weekend. On one of our adventures we decided to stop at our local bakery to get some treats. Their donuts were spot on and definitely worth the calories. Their scotcharoos, on the other hand, left something to be desired. Which is why I decided to make my own scotcharoos and share them with you too so that you won’t be disappointed with some crappy dessert! Ingredients:1 cup sugar 1 cup light corn syrup 6 cups rice krispies 1 ½ cups peanut butterFrosting Ingredients1 cup chocolate chips 1 cup butterscotch chipsDirections for ScotcharoosIn a stainless sauce pan on the stove top, mix the sugar and corn syrup until it is bubbly. Remove from heat. Add peanut butter to the sugar and syrup mixture. Mix until it is smooth. Pour rice krispies into a large bowl. Pour peanut butter, sugar, and syrup mixture over the rice krispies. Mix to coat the krispies well. Once coated, press firmly into a greased 9×13 pan.Melt the chocolate chips and butterscotch chips together. This can be done on the stovetop or by microwave. If using a microwave make sure to stir every 30 seconds to prevent over cooking. Once melted, spread overtop of the rice krispies. Allow to cool and then enjoy.Tips & TricksA lot of scotcharoo recipes call for karo syrup. If that is what you have on hand and want to use, this recipe will still work perfectly. I choose corn syrup because I can buy an organic version from Azure. It takes nearly the entire bottle of syrup but I still prefer to have it be slightly more healthy if possible. The only real tip I have for Scotcharoos is to make sure that you are pressing them really well. If you don’t press them, they’ll just fall apart in your hands. I like to start with a spatula to press them in there initially. Then I’ll do one round using my palms to really make sure it’s all stuck together well. Also, I cooked the syrup and sugar in the same pan that I used to melt the chocolate and butterscotch. Save yourself some dishes and use that one pan for both! In Conclusion: ScotcharoosDon’t let these ones get left out of your dessert rotation. They are super quick and easy to make. One of the best parts is that you don’t even have to turn your oven on! Some quick stovetop action and these babies are finished up. They are easy to take on the road or look beautiful set out on a display of desserts too.
