I’ve told myself that I can’t try making my own caramel until I empty some jars. Normally, I’d just buy some but we have so many jars!! Plus, I’m finding that my older jelly doesn’t keep in the fridge nearly as long. We’ve now had two jars get moldy! So, I’m determined to get creative. Starting with these strawberry blondies. A Strawberry and A Blondie MeetThese are basically blondies with jam. A light brownie but with jam. The sugar is low in them because the jam makes them much sweeter. I even make a low sugar jam recipe too and it still adds a lot of sweetness to it. Homemade or store bought jam will work just fine and I promise you don’t need to adjust anything for either of them.Does it Have to be Strawberry?I assume if you’re looking at this you like strawberries. Or hey, maybe you’re like me and you’re just looking to use up jam. In which case I’m pleased to tell you that the flavor can be adjusted. Pick a type of jam. Now you have that flavor of blondies! Blueberry, raspberry, dandelion…you name it. The other option is to use up all the little bits of jars that you have leftover. If you’re the type that opens up several flavors of jam at once then this would be an awesome way to clear them up. Mix them all together into these blondies and enjoy! Ingredients for Strawberry Blondies1 ½ cups flour1 tsp baking powder½ tsp cinnamon½ tsp salt1 cup sugar½ cup butter (melted)2 eggs1 tsp vanilla8oz strawberry jamDirectionsPreheat oven to 350. Mix the wet ingredients- butter, eggs, vanilla. Beat in the sugar. Add in all the remaining ingredients except the jam. Mix well. Scoop half of the batter into a greased 8×8 pan. Smooth it into the pan to form an even layer. I LOVE glass baking dishes.Pour the jam on top of that layer and smooth it. Use the rest of the batter to make a top layer. It works best if you grab a chunk and flatten it in your hands then set it on top of the jam.Bake 30-40 minutes, or until golden brown.In Summary: Strawberry BlondiesThese strawberry blondies are a wonderful treat for any time of year. Plus you can customize them to use whatever flavor of jam that you have lying around.
