Apple Coffee Cake
This coffee cake is perfect for your next brunch.

- 1 1/2 cups oil or butter
- 2 cups granulated sugar
- 2 eggs
- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 cup coconut optional
- 1 cup nuts
- 1 tsp vanilla
- 3 cups chopped apples
Crumb Topping
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup butter
- 1 1/2 cups flour
Preheat oven to 325.
Beat the oil, eggs, and sugar.
Add the remaining ingredients and mix
Spread mixture into a greased baking pan.
Add crumb topping if desired.
Bake on 325 for 1 hour.
You can replace the oil in the cake with butter or a mixture of oil, butter, and milk.
Nuts are also optional.
