Chocolate Zucchini Cake
A good way to sneak in some vegetables.

- 3 cups flour
- 1 med. zucchini shredded
- 2 tsp baking soda
- 1 tsp salt
- 1 cup oil or melted butter
- 1/2 cup buttermilk
- 3/4 cup cocoa powder
- 1 3/4 cup sugar
- 3 eggs
- 1 tsp vanilla
Preheat oven to 375 and grease 9x13 pan.
Mix all of the wet ingredients except zucchini- oil, buttermilk, eggs. Beat well.
Add in the cocoa and sugar. Mix well.
Add in the remaining dry ingredients and mix well.
Fold in the zucchini.
Pour into the greased pan.
Bake for 1 hour or until a toothpick inserted comes out clean.
