Chocolate Zucchini Cake

A good way to sneak in some vegetables.

Ingredients
  

  • 3 cups flour
  • 1 med. zucchini shredded
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 cup oil or melted butter
  • 1/2 cup buttermilk
  • 3/4 cup cocoa powder
  • 1 3/4 cup sugar
  • 3 eggs
  • 1 tsp vanilla

Instructions
 

  • Preheat oven to 375 and grease 9x13 pan.
  • Mix all of the wet ingredients except zucchini- oil, buttermilk, eggs. Beat well.
  • Add in the cocoa and sugar. Mix well.
  • Add in the remaining dry ingredients and mix well.
  • Fold in the zucchini.
  • Pour into the greased pan.
  • Bake for 1 hour or until a toothpick inserted comes out clean.
