Kris Kringle Cookies

Not to sweet and easy to make cookies.

Ingredients
  

  • 6 oz semi-sweet chocolate pieces
  • 2 tbsp butter
  • 1 egg
  • 1 cup sifted powdered sugar
  • 1/2 tsp vanila
  • dash of salt
  • 1/2 cup flaked coconut
  • 1/2 cup chopped, dry, roasted peanuts

Instructions
 

  • In a medium saucepan, melt the chocolate and butter, stirring constantly.
  • Remove from heat and cool to lukewarm.
  • Beat in the egg until smooth.
  • Add the powdered sugar, salt, and vanilla. Mix well.
  • Stir in the coconut and nuts.
  • Chill.
  • From into a 10" long roll.
  • Wrap roll in waxed paper and chill until firm.
  • Slice 1/4" thick.
  • Bake at 350 for 10 minutes.

Notes

I bought peanuts from the store and then put them in my Ninja food processor to chop them up. Just peanut halves seem like they would be too big. Honestly, I think I should have blended them a little more.
