Summer Squash Cake

A delightful summer cake.

Ingredients
  

  • 3 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup poppyseeds
  • 1/2 cup buttermilk
  • 1/2 cup lemon juice
  • 1 cup butter (melted) 2 sticks
  • 1 3/4 cup sugar
  • 3 eggs
  • 1 summer squash shredded

Instructions
 

  • Preheat the oven to 325 and grease a bundt pan.
  • Cream sugar and butter together.
  • Add eggs, one at a time, mixing well after each addition.
  • Add lemon juice and buttermilk, mixing well.
  • Add dry ingredients and mix well.
  • Fold in the squash and poppy seeds.
  • Bake for 75 minutes, or until a toothpick inserted comes out clean.
