Canned Refried Beans

Yields 4 Pints

Ingredients
  

  • 1/2 onion chopped small
  • 3 cups dry pinto beans
  • 2 Tbsp minced garlic
  • 3 Tbsp tomato sauce
  • 2 tsp salt
  • 2 tsp black pepper
  • 1 1/2 tsp cumin
  • 1 tsp chili powder

Instructions
 

  • Rinse beans.
  • Soak beans 8-12 hours.
  • Rinse beans again.
  • Scoop 1 1/4 cups of beans into each pint.
  • Add 1 Tbsp of onions to each pint.
  • Mix all of the remaining ingredients in a separate bowl.
  • Add 1-1 1/2 tsp of the sauce mixture to each pint.
  • Fill the remainder with water, leaving 1 inch of headspace.
  • Process at 10lbs of pressure for 80 minutes (pints) or 95 minutes (quarts).
  • Allow to naturally cool.
