Peel potatoes and cook them. (You can boil or use an instant pot).
After potatoes are cooked mash them.
Add salt and pepper to potatoes. Set aside.
Cut up bacon into small chunks.
Cook bacon in frying pan. Set aside.
Preheat the oven to 400.
Chop or mince the onion.
Add the butter to a frying pan and melt.
Add the onion and cook until it's translucent.
Add the onions and butter to the mashed potatoes.
Add the sour cream to the mashed potato mixture.
Spread the potato mixture into a 9x13 pan.
Top with shredded cheese.
Sprinkled the cooked bacon on top of the cheese.
Bake for 15-30 minutes until the cheese is melted well.
