Chicken Pot Pie Skillet

Ingredients
  

  • 1 lb boneless chicken
  • 3 cups bone broth
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup four
  • 2 cups frozen mixed vegetables

Biscuits

  • 1.5 cup self rising flour
  • 1.5 cup greek yogurt
  • 1-2 tsp garlic salt

Instructions
 

  • Preheat oven to 450.
  • Heat oil in your cast iron skillet (enough to give it a good coating).
  • Add chicken to your skillet. Sprinkle with salt and pepper. Cook until brown. About 2 minutes each side.
  • Add the flour and whisk. It should be pretty thick.
  • Slowly add the bone broth and continue to whisk.
  • Add the frozen vegetables and reduce heat to simmer.
  • In a mixing bowl, combine the biscuit ingredients (flour, greek yogurt, garlic powder).
  • Drop the biscuits by the spoonful on top of the skillet mixture.
  • Put the entire skillet in the oven and bake for 15-20 minutes, until the biscuits are golden brown.

Notes

If you want a thicker filling you can add some cornstarch or arrowroot powder to thicken the broth up into more of a gravy.
