I know what you’re thinking. ANOTHER DESSERT, Bri! We’re all going to get fat and sassy at this rate. Most of my dinners are thrown together without a recipe and that makes it very hard for me to share them. It’s something that I want to work on but right now I don’t have the capacity. Cooking with a clingy eight month old is hard enough! Trying to add in any sort of documentation is going to be difficult. I promise to give it my best effort. Desserts, on the other hand, are a little easier because we eat them for many days and they’re typically made during nap time. For now you’ll just have to enjoy this fruit butter cake recipe. Low Sugar Just a note, per usual, that this recipe is low sugar. Most of my recipes are because we like sweets but we like them to be slightly more healthy. If you try to compare these to store bought desserts you’ll be disappointed. However, if you’re looking for something that is sweet but not excessive, this is definitely the treat for you. Fruit Butter What is fruit butter? Well, it’s what makes this a fruit butter cake. It’s fruit that has been cooked down a lot. When we were drowning in pears I decided to make some pear pie filling. When that didn’t use up enough pears I decided to whip up some pear butter by cooking them down until they were nice and thick. This is frequently done with apples and people seem to love apple butter. There are even some store-bought versions of apple butter too. This would definitely work in the recipe and would also help sweeten it up more because manufactured versions typically have sugar added to them. I don’t add sugar to my homemade fruit butter and that helps us keep the sugar levels down as well. I do think that you could replace the fruit butter with a jam or jelly, too! It’s on my list of things to try. I think it would add more sweetness and a fruity twist as well. The amount of jam or jelly is the same as the amount of fruit butter. Ingredients for Fruit Butter Cake 3 cups flour 1/4 tsp salt 2/3 cup sugar 4 tsp baking powder 1 1/2 cups milk 2 eggs 2 tsp vanilla 1/3 cup melted butter 1/2 pint fruit butter Optional Glaze 1 cup powdered sugar 2 to 3 Tbsp milk 1/2 tsp vanilla Directions Grease 9×13 pan. This one is my favorite because it’s so easy to transport and stays sealed well with the lid. In a large bowl, mix together all of the ingredients of the cake except the fruit butter. Spread the cake mixture into the 9×13 pan. Drop the fruit butter on top of the cake by the spoonful. Using a butterknife, swirl the fruit buttering the cake mixture thoroughly. Bake at 350 for 30-40 minutes. If desired, drizzle the glaze over the warm cake. In Summary: Fruit Butter Cake If your family isn’t big toast or breakfast eaters, you probably won’t end up using a lot of jam, jelly, or fruit butter. I love to make these things and typically end up making them in large batches due to what the recipe requires or the amount of produce that we have on hand. Then they end up lasting us for several years, which is truly a great thing. I love not having to make jelly every single year but then it gets to a point where I have to start using it up. It doesn’t last as long in the fridge after we open it and that’s how I can tell it’s time for a fresh batch. In general, I try to use them up every 2-3 years. Hopefully, now that we’ve added another mouth to the family we won’t have as much to use up! We’ll still be making this fruit butter cake though, because it’s that delicious!
