I guess we just don’t eat a lot of toast and right now we don’t eat a lot of peanut butter and jelly either. Though, I do have a feeling that is going to change very soon once our little girl starts eating sandwiches. I’m so excited to make her some bread with our favorite recipe and see how much she enjoys it. Until then, I’ll keep finding more ways to use up jam so we can have fresh when she is ready. These jam muffins might top the list of my favorite ways to use up jam. Ingredients2 cups flour 2 tsp baking powder 1/2 tsp salt 1/2 tsp cinnamon 1/3 cup vegetable oil 3/4 cup sugar 1 egg 1 cup milk 1/2 pint jamDirections for Jam MuffinsMix all ingredients except the jam together. Line 12 muffin tins or grease them. Don’t be like me, make sure you get the unbleached liners. (I’ll be grabbing them when this stack of nearly 500 that I got a long time ago is used up.)Fill each cup halfway with batter. Add a spoonful of jam to each cup. Fill cup the rest of the way with batter. Bake at 350 for 35 minutes or until golden brown. We typically have a lot of protein but usually a sweet treat too. Previous treats include jam coffee cake and now these jam muffins. I look forward to our family breakfast all week and typically start planning mine weeks ahead of time so that I’m ready for the next one.
